Ingredients
- 1 lb chicken breast or thighs, diced into bite-sized pieces
- 8 oz vermicelli pasta (thin noodles)
- 1 medium avocado, sliced
- 1 medium apple (Granny Smith or Honeycrisp), thinly sliced
- 1.5 tsp ground cinnamon, ginger, and cumin (mixed spice blend)
- 2 tbsp honey
- ¼ cup sliced almonds or pistachios, toasted
- ½ medium onion, thinly sliced
