Ingredients

  • 2 sheets nori sheets
  • 1 medium cucumber
  • 1 medium carrot
  • 2 stalks green onions
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar

Instructions

    Cut the cucumber and carrot into thin matchsticks, about 2 inches long. Thinly slice the green onions.

    Lay one nori sheet on a clean surface. Arrange half the cucumber and carrot sticks in a line along one edge.

    Sprinkle with half the green onions, then drizzle with half the soy sauce and rice vinegar.

    Roll the nori tightly around the filling, starting from the filled edge. Repeat with the remaining sheet and filling.

    Slice each roll into 1-inch pieces and serve immediately.
