Ingredients

  • 8 oz large shrimp
  • ¼ tsp kosher salt
  • ⅛ tsp black pepper
  • 1 tbsp neutral oil
  • 3 tbsp unsalted butter
  • 1.5 tbsp white miso paste
  • 1 tbsp sake
  • ½ tbsp mirin
  • 1 oz uni roe (sea urchin)
  • ¼ oz fresh chives
  • ¼ whole lemon

Instructions

    Pat shrimp dry with paper towels, then season both sides evenly with kosher salt and black pepper. This removes excess moisture so the shrimp will sear properly and develop a golden crust.

    Heat a small skillet over medium-high heat and add neutral oil. Once shimmering and just beginning to smoke, carefully place shrimp in the pan and sear 2–3 minutes per side until opaque and lightly golden.

    While shrimp cook, whisk together softened butter, white miso paste, sake, and mirin in a small bowl until smooth and fully combined. This miso butter will add umami depth and richness.

    Transfer seared shrimp to a serving plate and immediately top each with a small dollop of miso butter, allowing it to melt gently over the hot shrimp. Arrange shrimp in a visually appealing pattern.

    Carefully place a small spoonful of uni roe (about 0.5 tbsp per shrimp) atop the miso butter, then scatter fresh chives over the top. Finish with a light squeeze of lemon juice just before serving.
