Pat shrimp dry with paper towels, then season both sides evenly with kosher salt and black pepper. This removes excess moisture so the shrimp will sear properly and develop a golden crust.

Heat a small skillet over medium-high heat and add neutral oil. Once shimmering and just beginning to smoke, carefully place shrimp in the pan and sear 2–3 minutes per side until opaque and lightly golden.

While shrimp cook, whisk together softened butter, white miso paste, sake, and mirin in a small bowl until smooth and fully combined. This miso butter will add umami depth and richness.
