Ingredients

  • 2 cups cooked white rice
  • ¾ lb shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 whole lime (juiced)
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp chili oil or sriracha
  • 2 tbsp olive oil
  • 1 to taste salt and pepper

Instructions

    Pat shrimp dry with paper towels. Season generously with salt and black pepper.

    Heat olive oil in a large skillet over medium-high until it shimmers, ~90 seconds.

    Add minced garlic and cook 30 seconds until fragrant, stirring constantly.

    Add shrimp to the skillet and cook 90 seconds per side without moving. Shrimp should turn opaque pink.

    Pour lime juice over shrimp, then remove from heat immediately.

    Divide cooked rice between two bowls and top with seared shrimp.

    Drizzle each bowl with chili oil, scatter cilantro on top, and serve immediately.
