Ingredients

  • 1 lb beef sirloin or ribeye steak (1-inch thick)
  • 2 tbsp fish sauce
  • 1 whole lime (juiced)
  • 1 whole shallot, thinly sliced
  • 1 whole Thai bird's eye chili, sliced (or red pepper flakes)
  • 1.5 cups jasmine rice (cooked) or butter lettuce leaves
  • ¼ cup fresh cilantro, mint, or basil (chopped)

Instructions

    Pat beef dry with paper towels. Season generously with salt and black pepper on both sides.

    Heat oil in a heavy skillet over medium-high until it shimmers, about 90 seconds.

    Sear beef 2 minutes per side without moving — center should still be rare to medium-rare.

    Transfer beef to a cutting board and rest 3 minutes, then slice against the grain into bite-sized pieces.
