Ingredients
- 8 oz rice noodles
- ½ lb shrimp
- 2 cups mixed vegetables (carrots, zucchini, mushrooms)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 2 cloves garlic
- 1 tsp sesame seeds

Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain.

Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add the 0.5 lb shrimp and cook until pink and opaque, about 2 minutes per side. Remove and set aside.

Add the remaining 1 tbsp vegetable oil, 2 minced garlic cloves, and 2 cups mixed vegetables. Stir-fry until tender-crisp, about 4-5 minutes.

Add the drained noodles, 3 tbsp soy sauce, and 1 tbsp sesame oil. Toss everything together for 2-3 minutes until well combined and heated through.
