Ingredients

  • 8 oz rice noodles
  • ½ lb shrimp
  • 2 cups mixed vegetables (carrots, zucchini, mushrooms)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cloves garlic
  • 1 tsp sesame seeds

Instructions

  1. 1

Soak the 8 oz rice noodles in hot water until pliable, about 10 minutes, then drain.

  2. 2

Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add the 0.5 lb shrimp and cook until pink and opaque, about 2 minutes per side. Remove and set aside.

  3. 3

Add the remaining 1 tbsp vegetable oil, 2 minced garlic cloves, and 2 cups mixed vegetables. Stir-fry until tender-crisp, about 4-5 minutes.

  4. 4

Add the drained noodles, 3 tbsp soy sauce, and 1 tbsp sesame oil. Toss everything together for 2-3 minutes until well combined and heated through.

  5. 5

Return the shrimp to the pan, toss for 1 minute to warm through, then sprinkle with 1 tsp sesame seeds and serve hot.
