Ingredients

  • ½ lb ground pork
  • ½ medium onion, diced small
  • ¾ cup beef or chicken broth
  • 1 tbsp all-purpose flour
  • ½ tsp thyme, fresh or dried
  • 1 sheet ready-made pie dough (thawed if frozen)

Instructions

    Set the oven to 400°F and wait until the indicator light or beep tells you it has finished heating, about 10 minutes.

    Place the pie dough sheet on the kitchen counter to thaw and soften, about 5 minutes, so you can shape it without cracking.

    Place a 10-inch cast iron skillet or oven-safe baking dish over medium-high heat and warm for 1 minute until hot to the touch.

    Add the ground pork to the hot skillet and break it into pea-sized pieces with a wooden spoon, stirring every 10 seconds until no pink remains and the meat turns light brown, about 4 minutes.

    Add the diced onion to the cooked pork and stir once every 15 seconds until the onion becomes translucent and soft, about 2 minutes.

    Sprinkle the flour over the pork and onion and stir constantly for 30 seconds until the flour is fully absorbed and the mixture looks slightly thickened.

    Pour in the broth and stir with a wooden spoon to combine, scraping up any stuck-on brown bits from the bottom of the skillet, about 30 seconds.

    Sprinkle the thyme over the pork mixture and stir once to combine.

    Remove the skillet from the heat and let the filling cool at room temperature for 3 minutes so the pastry doesn't tear when applied.

    Drape the thawed pie dough sheet over the top of the skillet, letting it hang over the edges; gently press it down onto the filling with your fingertips, sealing it to the rim of the skillet.

    Use a sharp knife to trim any dough hanging more than 1 inch over the edge, then fold the trimmed edge back over itself to create a lip around the rim.

    Use a fork to prick the surface of the dough in 12–15 places to allow steam to escape while baking.

    Place the skillet on the middle rack of the preheated oven and bake until the crust turns the color of warm honey with golden-brown edges, about 15 minutes.

    Remove the skillet from the oven using an oven mitt and let it rest on the countertop for 2 minutes before serving.
