Ingredients
- 10 oz ground beef
- 2 fillets anchovy fillets, minced
- 1 tablespoon capers, finely chopped
- ½ cup heavy cream
- 2 tablespoon butter
- 1 pinch salt and pepper

Place the ground beef in a medium bowl and add the minced anchovies, capers, salt, and pepper. Use your hands to mix gently until just combined—do not overmix or the patties will be tough.

Divide the mixture in half and shape each half into a smooth oval patty about 3/4 inch thick and 4 inches long, like a flattened egg. Set aside on a plate.

Place a large skillet over medium-high heat and add 1 tablespoon of butter. When the butter foams and smells fragrant, about 45 seconds, carefully slide both patties into the pan.

Cook without moving the patties for 3 minutes until the bottom is a rich golden-brown color. Flip each patty gently with a spatula and cook the second side for another 2 minutes.

Transfer the cooked patties to a clean plate. Set the skillet back on medium heat and add the remaining 1 tablespoon of butter and the heavy cream.
