Sausage McMuffin

Ingredients
- 8 oz ground pork
- ¼ tsp salt
- ⅛ tsp black pepper
- 2 whole English muffins
- 2 slices American cheese or cheddar
- 2 whole eggs
- 1 tbsp butter

Divide ground pork into two equal portions. Form each into a flat patty about 3 inches wide.

Season each patty generously with salt and pepper on both sides.

Heat a skillet over medium-high heat. Once hot, add sausage patties without moving them.

Cook until browned and crispy on the first side, about 4 minutes. Flip and cook the other side 3 minutes.

Place one cheese slice on each patty while still in the skillet. Cover briefly until melted, ~30 seconds.

Transfer patties to a plate. Crack eggs into the same skillet and cook sunny-side up until whites set, ~3 minutes.

Split English muffins in half and toast them cut-side down in a clean skillet with a dab of butter until golden, ~2 minutes.

Place one sausage patty and one egg on the bottom half of each muffin. Top with the other muffin half.
