- 2 eggs large eggs
- 1 slice sharp cheddar cheese

Set an 8-inch non-stick skillet over medium-high heat. Once hot, place the 2 pork breakfast sausage patties in the dry skillet — they should sizzle immediately. Cook for 3-4 minutes per side until the exterior is deep brown and the internal temperature reaches 160°F on an instant-read thermometer. Transfer to a plate.

Reduce heat to medium. Crack the 2 large eggs into a small bowl, add 0.25 teaspoon kosher salt and 0.125 teaspoon freshly cracked black pepper, and whisk vigorously for 15 seconds until the yolks and whites are completely combined. Add 0.5 tablespoon of unsalted butter to the same skillet and swirl to coat the bottom evenly — the butter should foam gently but not brown.

Pour the beaten eggs into the foaming butter and let them sit undisturbed for 10-15 seconds — you'll see the bottom begin to set. Using a rubber spatula, gently push the eggs from the edges toward the center, tilting the skillet so uncooked egg flows to the outer edges. Continue this motion every 15-20 seconds for 1-2 minutes until the eggs are mostly set but still slightly moist on top. They'll continue to cook from residual heat.
