Ingredients

  • ¾ lb chicken breast, cubed (1-inch pieces)
  • ⅓ cup creamy peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp lime juice
  • 1.5 tbsp brown sugar
  • 2 whole garlic clove, minced
  • 8 oz lontong (rice cake), sliced
  • 3 tbsp fried shallots

    Thread chicken cubes onto metal skewers, dividing evenly between 4 skewers.

    Whisk peanut butter, soy sauce, lime juice, brown sugar, garlic, and 1/4 cup water until smooth.

    Heat a grill pan or cast-iron skillet over high heat until it smokes lightly, about 90 seconds.

    Lay skewers in the hot pan without moving for 3 minutes until charred, then flip and cook 2 minutes more.

    Warm lontong slices in the same pan for 1 minute per side, then divide between two plates.
