Ingredients
- 12 oz cooked udon noodles, chilled
- 3 tbsp vegetable oil (for frying)
- 8 oz shrimp, peeled and deveined
- 3 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp mirin (sweet rice wine)
- 2 cloves garlic, minced
- 2 stalks scallions, sliced thin (white and green separated)
- ¼ cup bonito flakes (katsuobushi)
- 1 tsp sesame seeds

Pat udon noodles dry with paper towels; separate any clumps with your fingers.

Mix oyster sauce, soy sauce, and mirin in a small bowl.

Heat oil in a 12-inch skillet over medium-high until shimmering, ~90 seconds.

Add udon noodles in a single layer. Press down with a spatula; don't stir.

Cook until the bottom is golden and crispy, ~3 minutes. Flip and crisp the other side.

Push noodles to the side. Add shrimp to the empty space and sear 90 seconds per side.

Add garlic to the shrimp, stir constantly for 30 seconds until fragrant.

Pour sauce over noodles and shrimp. Toss to coat; cook 30 seconds more.

Divide between plates. Top with white scallion parts, bonito flakes, and sesame seeds.
