Ingredients
- 400 g paneer, crumbled
- 100 g milk solids or khoya, grated
- 150 g powdered sugar
- 4 whole cardamom pods, crushed and ground
- 1 tbsp ghee
- 2 tbsp dried fruit, chopped (raisins, dates)
- 2 tbsp nuts, chopped (pistachio, almond)

Crumble the paneer finely with your fingers until it resembles breadcrumbs.

Grate the khoya into fine pieces.

Crush and grind the cardamom pods to a fine powder.

Combine crumbled paneer, grated khoya, and powdered sugar in a bowl. Mix well.

Add ground cardamom, ghee, dried fruit, and half the chopped nuts. Fold gently until mixture comes together.

Knead the mixture gently for 2-3 minutes until it becomes smooth and cohesive.

Divide mixture into 12 equal portions.

Roll each portion into a smooth ball or oval shape.

Press remaining nuts onto the top of each sandesh.

Refrigerate for at least 1 hour before serving.
