Ingredients
- 1.5 cups basmati rice
- 3 tbsp sambar powder
- 1 medium onion, diced
- 1 medium carrot, diced
- 1 cup green beans, trimmed and cut into 1-inch pieces
- 1 tbsp tamarind paste
- ½ tsp turmeric powder
- 2 tbsp olive oil
- 1 to taste salt and black pepper to taste

Rinse basmati rice in cold water until water runs clear, about 2 minutes.

Dice the onion, carrot, and cut green beans into 1-inch pieces.

Heat oil in a large saucepan or rice pot over medium heat until shimmering.

Add diced onion and sauté for 3 minutes until soft and translucent.

Stir in sambar powder and turmeric. Toast for 30 seconds until fragrant.

Add carrot and green beans. Sauté for 2 minutes, stirring occasionally.

Add rinsed rice and stir to coat with oil and spices, about 1 minute.

Pour in 3 cups water and tamarind paste. Stir to combine.

Bring to a boil, then reduce heat to low, cover, and simmer 18 minutes.

Remove from heat and let stand covered for 5 minutes until rice is fluffy.
