Ingredients
- 1 cup basmati rice
- 2 tbsp sambar powder
- 1 tbsp tamarind paste
- ½ medium yellow onion, diced
- ½ cup carrots, diced small
- 2 cups water

Heat oil in a large pot over medium. Add onion and cook, stirring, until golden and fragrant, ~3 minutes.

Add sambar powder and stir for 30 seconds until the spices bloom and smell toasted.

Pour in water and tamarind paste, then add rice, carrots, salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer until rice is tender and liquid is absorbed, ~12 minutes.

Remove from heat. Let rest covered for 2 minutes, then fluff with a fork.
