Ingredients

  • 1 lb fresh tomatillos, husked and rinsed
  • 1 whole jalapeño, seeded
  • ⅓ cup fresh cilantro, packed
  • ¼ medium onion white onion, quartered
  • 1 whole lime, juiced
  • ½ tsp salt

Instructions

    Halve the tomatillos and place cut-side down on a cast iron skillet over medium-high heat.

    Char tomatillos 3 minutes until they collapse and blacken slightly on the flat side; add jalapeño to the pan.

    Transfer tomatillos and jalapeño to a blender with cilantro, onion, lime juice, and salt.

    Pulse until you reach your preferred texture — chunky or smooth — then taste and adjust salt.

    Transfer to a bowl and serve warm or at room temperature alongside tacos.
