Ingredients
- 2 cups cooked sushi rice, divided
- 10 oz salmon fillets, skinless
- 1 whole avocado
- 3 tbsp mayonnaise
- 1 tbsp sriracha
- 2 whole nori sheets

Preheat oven to 400°F. Press 1.5 cups sushi rice into bottom of 8-inch baking dish.

Pat salmon dry. Season with salt and pepper on both sides.

Mix mayo and sriracha in a small bowl until combined.

Heat a skillet over medium-high until shimmering, ~90 seconds.

Sear salmon 2 minutes per side without moving. Center will be rare.

Spread spicy mayo over rice. Layer salmon on top, breaking into chunks.

Slice avocado and arrange over salmon. Top with remaining rice and nori sheets.

Bake 8–10 minutes until rice is golden and edges crisp.

Remove from oven. Let rest 2 minutes, then serve directly from dish.
