Ingredients
- 2 fillet salmon fillets
- 4 cup romaine lettuce
- 1 cup carrots
- 1 cup purple cabbage
- 1 whole lime
- 2 tablespoon olive oil

Season the 2 salmon fillets with salt and pepper. Heat 1 tbsp olive oil in a skillet over medium-high heat.

Cook the salmon for 4-5 minutes per side, until it flakes easily with a fork and is opaque throughout. Remove from heat and let cool slightly.

In a large bowl, combine the 4 cups romaine lettuce, 1 cup shredded carrots, and 1 cup shredded purple cabbage.

In a small bowl, whisk the juice of 1 lime with the remaining 1 tbsp olive oil, and a pinch of salt and pepper.
