Ingredients
- 2 lbs beef short ribs (galbi-cut, thinly sliced across the bone)
- ½ cup soy sauce
- 1 medium pear, peeled and grated
- 3 tbsp sesame oil
- 4 cloves garlic, minced
- 1 tbsp ginger, minced
- 2 tbsp brown sugar
- 4 stalks green onions, chopped (white and green parts separated)

Combine soy sauce, grated pear, sesame oil, garlic, ginger, and brown sugar in a bowl.

Add beef short ribs and white parts of green onions. Stir until coated evenly.

Let sit for 15–20 minutes at room temperature, stirring occasionally.

Heat a cast-iron skillet or grill pan over medium-high until it shimmers, ~2 minutes.

Working in batches, sear short ribs 2–3 minutes per side without moving until charred.

Transfer to a serving platter. Spoon any remaining marinade over the ribs.
