  • 2 cups powdered sugar
  • 2 large egg whites (pasteurized)
  • 1 tbsp lemon juice
  • 4 colors gel food coloring (assorted colors)
  • 2 tbsp water
  • 2 tbsp edible pearls or sprinkles (optional)

Instructions

    Whisk powdered sugar, pasteurized egg whites, and lemon juice until smooth and thick, about 2 minutes.

    Divide icing among 4 small bowls. Add a drop of gel coloring to each bowl and stir until vibrant.

    Add water, a few drops at a time, to reach a consistency that flows from a spoon but still holds shape.

    Spoon or pipe icing onto cookies in stripes, dots, or solid coverage using squeeze bottles or piping bags.

    Sprinkle edible pearls or sprinkles onto wet icing immediately, then let dry 5 minutes before serving.
