Ingredients
- 2.5 lb pork ribs (baby back or spare)
- 3 tbsp whole-grain mustard
- 2 tbsp honey
- 2 tbsp apple cider vinegar
- 2 sprigs fresh thyme (or 1 tsp dried)
- 1.5 tsp salt
- ¾ tsp black pepper

Preheat oven to 375°F. Pat the ribs dry with paper towels.

Mix mustard, honey, vinegar, thyme, salt, and pepper in a small bowl until smooth.

Arrange ribs bone-side down on a rimmed sheet pan. Brush mustard glaze evenly over the top side.

Roast for 35–40 minutes until meat pulls back from the bones and edges are caramelized.

Brush any remaining glaze on top during the last 5 minutes of roasting for a glossy finish.
