Ingredients
- 2 cups cooked rice
- 1 lb chicken breast
- 2 tbsp soy sauce
- 2 cloves garlic
- 2 cups spinach
- 2 large eggs

Slice the 1 lb chicken breast into thin strips. Mince the 2 garlic cloves. Heat 1 tbsp oil in a skillet over medium-high heat until shimmering.

Add the chicken and garlic to the skillet. Stir-fry until the chicken is golden and cooked through, about 5-6 minutes. Add the 2 tbsp soy sauce and toss to coat.

Add the 2 cups spinach to the skillet and stir until wilted, about 1-2 minutes. Remove from heat and set aside.

In a separate nonstick skillet, heat 1 tsp oil over medium heat. Crack the 2 eggs into the pan and fry until the whites are set and the edges are crispy, about 3-4 minutes.
