Ingredients
- 1 cup white rice
- 2 cups water
- 1 head broccoli
- 2 tablespoons olive oil
- 2 cloves garlic
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- 1
Rinse the 1 cup rice in a fine-mesh strainer until the water runs clear. In a medium saucepan, combine the rice and 2 cups water and bring to a boil over high heat.
- 2
Reduce heat to low, cover, and simmer until the water is absorbed and the rice is tender, about 18 minutes. Remove from heat and let stand, covered, for 5 minutes.
- 3
While the rice cooks, cut the 1 head broccoli into small florets. Peel and thinly slice the 2 garlic cloves.
- 4
Heat the 2 tbsp olive oil in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute, stirring constantly.
- 5
Add the broccoli florets and 2 tbsp water to the skillet. Cover and cook until the broccoli is bright green and tender-crisp, about 5 minutes. Season with the 0.5 tsp salt and 0.25 tsp pepper.
- 6
Fluff the cooked rice with a fork and add it to the skillet with the broccoli. Toss everything together over low heat until well combined and heated through, about 2 minutes. Serve warm.
