Ingredients
- 4 whole palm leaves
- 1 cup jasmine rice
- ½ cup coconut milk
- ½ cup water
- ½ teaspoon salt
Instructions
- 1
Soak the 4 palm leaves in warm water for 10 minutes until pliable. Meanwhile, rinse the 1 cup jasmine rice under cold water until the water runs clear.
- 2
In a bowl, combine the rinsed rice, 0.5 cup coconut milk, 0.5 cup water, and 0.5 teaspoon salt. Stir well to mix.
- 3
Fold each palm leaf into a cone shape, leaving an opening at the top. Fill each cone with about 1/4 cup of the rice mixture, leaving a little space for expansion.
- 4
Fold the top of the leaf over to enclose the rice, and secure with a toothpick or tie with kitchen twine. Repeat with remaining leaves.
- 5
Place the wrapped dumplings in a steamer basket over boiling water. Steam over medium heat until the rice is tender and cooked through, about 20 minutes. The rice should be soft and slightly sticky when done. Let cool slightly before unwrapping and serving.
