Ingredients

  • 4 cups water
  • 3 tbsp red miso paste
  • 8 oz firm tofu
  • 3 stalks green onions
  • 1 tsp dashi granules

Instructions

    In a medium pot, bring the 4 cups water and 1 tsp dashi granules to a boil over high heat, then reduce to a simmer.

    Cut the 8 oz tofu into 1/2-inch cubes and slice the 3 green onions thinly, separating white and green parts.

    Add the tofu cubes and white parts of the green onions to the simmering broth; cook for 3-4 minutes until tofu is heated through.

    Place the 3 tbsp red miso paste in a small bowl, ladle in about 1/2 cup of hot broth, and whisk until smooth.

    Stir the miso mixture back into the pot; do not boil. Simmer gently for 1-2 minutes until fragrant.

    Ladle the soup into bowls and garnish with the remaining green onion tops. Serve hot.
