Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 medium yellow onion, diced
- 1 whole (juiced) lemon
- ¾ tsp cumin
- ¼ tsp red pepper flakes

Heat olive oil in a large pot over medium. Add diced onion, cook 3 minutes until softened and fragrant.

Add red lentils, broth, cumin, and red pepper flakes. Stir to combine.

Bring to a boil, then reduce heat to medium-low. Simmer 12 minutes until lentils dissolve into a thick, creamy soup.
