Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 medium yellow onion, diced
  • 1 whole (juiced) lemon
  • ¾ tsp cumin
  • ¼ tsp red pepper flakes

Instructions

    Heat olive oil in a large pot over medium. Add diced onion, cook 3 minutes until softened and fragrant.

    Add red lentils, broth, cumin, and red pepper flakes. Stir to combine.

    Bring to a boil, then reduce heat to medium-low. Simmer 12 minutes until lentils dissolve into a thick, creamy soup.

    Squeeze in lemon juice. Taste and season with salt and pepper. Stir well.

    Serve hot. Drizzle with olive oil and a pinch of red pepper flakes if desired.
