Ingredients
- 2 packages ramen noodles
- 1 lb chicken breast
- 2 eggs
- 3 stalks green onions
- 3 tbsp soy sauce
- 4 cups chicken broth

Bring a pot of water to a boil. Add the 2 eggs and cook for 6-7 minutes for a soft-boiled yolk. Remove and cool in ice water, then peel and set aside.

In a large pot, bring the 4 cups chicken broth and 3 tbsp soy sauce to a simmer over medium heat. Add the 1 lb chicken breast and cook until no longer pink in the center, about 10-12 minutes. Remove chicken, slice thinly, and set aside.

In the same simmering broth, add the 2 packages ramen noodles (discard seasoning packets) and cook until tender, about 3-4 minutes.

Divide the noodles and broth between two bowls. Top with sliced chicken, halved soft-boiled eggs, and sliced green onions. Serve hot.
