Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 large cucumber, diced
  • 1.5 cups cherry tomatoes, halved
  • ¼ cup red onion, thinly sliced
  • ¾ cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • ½ tsp each salt and pepper

Instructions

    Rinse quinoa in a fine-mesh strainer until water runs clear.

    Bring water to a boil in a medium saucepan; stir in quinoa.

    Reduce heat to low, cover, and simmer until quinoa absorbs all water, ~15 min.

    Fluff with a fork and spread on a plate to cool for 5 minutes.

    Transfer cooled quinoa to a large bowl; add cucumber, tomatoes, and onion.
