  • 1 cup cooked quinoa
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons butter
  • ½ cup chocolate chips

Instructions

    In a large bowl, whisk together the 1 cup flour, 2 tsp baking powder, and 1/2 tsp salt. Stir in the 1 cup cooked quinoa until well combined.

    In a small bowl, beat the 1 egg, then whisk in the 1 cup milk and 2 tbsp melted butter. Pour the wet ingredients into the dry and stir until just combined; the batter will be lumpy.

    Fold in the 1/2 cup chocolate chips gently. Let the batter rest for 5 minutes while you heat a griddle or large skillet over medium heat.

    Lightly grease the hot skillet with a little butter or oil. Pour 1/4 cup of batter per pancake, cooking in batches without crowding the pan.

    Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook until golden brown on the other side, another 1-2 minutes.
