Quick Vegetable Stir-Fry Noodles

Ingredients

  • 8 oz egg noodles or ramen noodles
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • ½ tbsp brown sugar
  • 1 tbsp sesame oil
  • 3 cups mixed vegetables (carrots, bell pepper, broccoli, snap peas), chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced

Instructions

    Boil salted water in a large pot. Add noodles and cook until al dente, ~4 minutes. Drain and set aside.

    Whisk soy sauce, rice vinegar, brown sugar, and sesame oil in a small bowl. Set aside.

    Heat 1 tbsp oil in a large skillet or wok over medium-high heat until shimmering, ~60 seconds.

    Add garlic and ginger. Stir until fragrant, ~30 seconds.

    Add vegetables. Stir-fry until tender-crisp, edges lightly charred, ~5 minutes.

    Add cooked noodles and sauce to the skillet. Toss until coated and heated through, ~2 minutes.

    Serve hot. Drizzle with extra sesame oil and top with fresh herbs or green onions if desired.
