Quick Skillet Steak Fajitas

Ingredients

  • 1.5 lb beef skirt or flank steak
  • 3 whole bell peppers (red, yellow, or orange), stems and seeds removed
  • 1 whole yellow onion
  • 3 tablespoon olive oil
  • 1 pinch salt and pepper
  • 8 whole flour tortillas

Instructions

  1. 1

    Place the steak on a cutting board. Using a sharp knife, slice the steak against the grain into strips about 1/4-inch thick — cut perpendicular to the long lines running through the meat.

    Hold each pepper upright and slice it lengthwise from top to bottom into 1/2-inch-wide strips, rotating around the pepper until all the sides are sliced and only the seedless core remains.

    Cut the onion in half from root to tip, place it cut-side down on the cutting board, and slice lengthwise into 1/2-inch-wide strips.

    Heat a 12-inch skillet over medium-high heat until it is very hot, about 2 minutes. You should see wisps of smoke rising from the surface.

    Pour 1 tablespoon of olive oil into the skillet, then immediately add the steak slices and let them sit without moving for 2 minutes, until the bottom turns golden brown.

    Stir the steak with a wooden spoon to break up the clumps and cook for another 2 minutes until most of the pink is gone, then transfer the steak to a clean plate.

    Pour the remaining 2 tablespoons of olive oil into the same skillet, then add the pepper and onion strips and stir once to coat them with oil.

    Let the peppers and onions sit undisturbed for 3 minutes until they begin to soften and the bottom edges char to a darker color.

    Stir the vegetables with a wooden spoon and cook for another 3 minutes, stirring every 30 seconds, until the peppers collapse slightly and the onions turn translucent at the edges.

    Return the cooked steak to the skillet and stir everything together for 1 minute until the steak is heated through, then taste and sprinkle salt and pepper to your liking.

    Warm the tortillas in a dry skillet over medium heat for about 30 seconds per side until they are soft and pliable, or wrap them in a damp kitchen towel and microwave for 1 minute.

    Transfer the steak and vegetables to a serving plate, place the warm tortillas on the table, and let each person assemble their own fajitas.
