Ingredients
- 1 can (13.5 oz) coconut milk
- 1 cup seafood or chicken broth
- 2 tablespoons laksa paste (red curry paste or laksa spice blend)
- ½ pound large shrimp, peeled and deveined
- 1 whole lime, halved
- 1 pinch salt and pepper to taste

Pour the coconut milk and broth into a large pot and place it on the stovetop over medium-high heat.

Add the laksa paste to the pot and whisk it into the liquid until completely smooth with no lumps, about 1 minute.

Bring the mixture to a gentle simmer — you should see small bubbles breaking the surface regularly — then reduce heat to medium.

Add the shrimp to the simmering broth, stirring gently once or twice so they cook evenly.
