Sambar with Store-Bought Idli

Ingredients
- 2 tbsp sambar powder
- 1 tbsp tamarind paste
- ½ cup red lentils (masoor dal)
- 1 cup mixed vegetables (carrots, beans, okra, or frozen mix)
- 1 small handful curry leaves (optional but traditional)
- 1 tsp mustard seeds

Heat 2 tbsp oil in a pot over medium-high. Crackle mustard seeds until they pop, ~30 seconds.

Add sambar powder, stir constantly for 30 seconds until fragrant, then add 2 cups water and tamarind paste.

Stir in red lentils and vegetables. Bring to a boil, then reduce heat and simmer uncovered until lentils break down and soften, ~8 minutes.

Add curry leaves and a pinch of salt. Taste and adjust for salt and tanginess (add more tamarind if needed).

While sambar finishes, steam or microwave frozen idli according to package (usually 3–4 minutes).

Serve sambar in bowls alongside warm idli. Idli goes on the side or torn into the broth.
