Ingredients

  • 1 loaf or 8-10 oz store-bought sponge cake (Madeira or similar)
  • ¾ cup dark rum
  • ½ cup granulated sugar
  • ½ cup water
  • 1 whole lemon (zested + juiced)
  • ½ cup fresh whipped cream or mascarpone

Instructions

    Slice cake into 1-inch-thick rounds or chunks. Arrange in a shallow bowl or baking dish.

    Combine rum, sugar, water, and lemon zest in a small saucepan over medium heat.

    Stir until sugar dissolves, about 2 minutes. Remove from heat and stir in lemon juice.

    Pour warm syrup over cake pieces. Let soak 5 minutes until liquid is absorbed.
