- 1 loaf or 8-10 oz store-bought sponge cake (Madeira or similar)
- ¾ cup dark rum
- ½ cup granulated sugar
- ½ cup water
- 1 whole lemon (zested + juiced)
- ½ cup fresh whipped cream or mascarpone

Slice cake into 1-inch-thick rounds or chunks. Arrange in a shallow bowl or baking dish.
