Ingredients
- 3 tablespoons butter
- 1 medium onion, diced into 1/4-inch cubes
- 2 medium potatoes, peeled and diced into 1/2-inch cubes
- 1 cup canned crushed tomatoes
- ¾ cup frozen peas
- 2 teaspoons pav bhaji masala spice blend
- 4 count pav bread or dinner rolls

Melt 2 tablespoons of butter in a large skillet over medium-high heat until the surface looks shiny and slides when you tilt the pan, about 45 seconds.

Add the diced onion and stir with a wooden spoon once every 10 seconds until the onion turns translucent and smells fragrant, about 2 minutes.

Pour in the diced potato and stir once every 15 seconds for 8 minutes until the potatoes soften and the edges turn slightly translucent.

Sprinkle the pav bhaji masala over the potatoes and stir for 30 seconds until the spice powder coats all the vegetables evenly and smells fragrant.

Pour in the crushed tomatoes and frozen peas, then stir until everything is combined, about 1 minute.

Reduce the heat to medium and simmer, stirring once every minute, until the potatoes are very soft and the mixture looks thick and chunky, about 6 minutes.

Split each pav bread or roll in half lengthwise so you have 8 halves with a flat cut side facing up.

Melt the remaining 1 tablespoon of butter in a separate skillet over medium heat until shiny, about 30 seconds, then place the pav halves cut-side down in the butter.

Toast the bread cut-side down until the exposed surface turns golden brown and feels crispy, about 2 minutes, then use tongs to transfer to a serving plate.

Spoon the bhaji mixture onto a serving bowl or plate and place the toasted pav bread pieces on the side.
