Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup prepared mole sauce
  • 8 tortillas corn or flour tortillas
  • 1 tbsp olive oil
  • 1 whole lime
  • ¼ cup fresh cilantro, chopped

Instructions

    Heat oil in a large skillet over medium heat until shimmering, about 60 seconds.

    Add shredded chicken and mole sauce, stir to combine until heated through, 5–6 minutes.

    Warm tortillas in a dry skillet or over a burner flame, 15 seconds per side.

    Spoon chicken-mole mixture into tortillas and top with fresh cilantro.

    Squeeze lime over each taco and serve immediately.
