Ingredients

  • 2 cups beef broth (or chicken)
  • 2.5 tsp unflavored gelatin powder
  • 1.5 cups diced rotisserie chicken or canned ham
  • ¾ cup diced cooked pork or beef kielbasa
  • ½ cup diced carrot (raw or quick-pickled)
  • ¾ cup diced cucumber
  • 3 tbsp fresh parsley and dill, chopped
  • 1 tbsp white vinegar

Instructions

  1. 1

Heat broth in a small pot until steaming. Sprinkle gelatin over and stir until fully dissolved, ~1 minute.

  2. 2

Remove from heat. Stir in vinegar and half the fresh herbs. Pour into a shallow bowl and chill in freezer, ~8 minutes.

  3. 3

Divide chicken, kielbasa, carrot, and cucumber among four serving bowls or glasses.

  4. 4

Pour the cooled (slightly thickened) broth over the meat and vegetables.

  5. 5

Top with remaining fresh herbs. Serve chilled or let it fully set in the fridge for 15+ minutes if you prefer firmer gelatin.
