Ingredients
- 2 cups beef broth (or chicken)
- 2.5 tsp unflavored gelatin powder
- 1.5 cups diced rotisserie chicken or canned ham
- ¾ cup diced cooked pork or beef kielbasa
- ½ cup diced carrot (raw or quick-pickled)
- ¾ cup diced cucumber
- 3 tbsp fresh parsley and dill, chopped
- 1 tbsp white vinegar

Heat broth in a small pot until steaming. Sprinkle gelatin over and stir until fully dissolved, ~1 minute.

Remove from heat. Stir in vinegar and half the fresh herbs. Pour into a shallow bowl and chill in freezer, ~8 minutes.

Divide chicken, kielbasa, carrot, and cucumber among four serving bowls or glasses.

Pour the cooled (slightly thickened) broth over the meat and vegetables.

Top with remaining fresh herbs. Serve chilled or let it fully set in the fridge for 15+ minutes if you prefer firmer gelatin.
