Ingredients

  • 1.5 cups cottage cheese (or ricotta)
  • 3 tbsp granulated sugar
  • 1 large egg
  • 8 sheets phyllo dough sheets (thawed)
  • 4 tbsp melted butter
  • ½ tsp vanilla extract
  • 1 tbsp powdered sugar (for dusting)

Instructions

    Mix cottage cheese, granulated sugar, egg, and vanilla in a bowl until smooth.

    Lay one phyllo sheet on a work surface, brush lightly with melted butter.

    Repeat layering and buttering 3 more phyllo sheets, then spread half the cheese mixture along one long edge.

    Roll tightly into a log, tucking in the sides. Transfer to a buttered baking sheet seam-side down.

    Repeat with remaining phyllo, butter, and cheese filling to make a second roll.

    Brush rolls with remaining butter. Bake at 400°F for 12–14 minutes until deep golden.
