Ingredients

  • ½ lb ground beef
  • 4 whole large eggs
  • ¾ cup shredded cheddar cheese
  • 2 whole flour tortillas, 10-inch
  • ½ tsp chili powder
  • 1 pinch salt and pepper to taste

    Place a 10-inch nonstick skillet over medium-high heat and wait 60 seconds until the surface is hot and shimmers when you tilt it slightly.

    Add the ground beef to the hot skillet and use a wooden spoon to break it into small crumbles as it browns, about 4–5 minutes, until no pink remains.

    Sprinkle the chili powder, salt, and pepper over the cooked beef and stir for 30 seconds until the spices smell strongly fragrant.

    Slide the cooked beef onto a clean plate, leaving any fat in the skillet.

    Crack the 4 eggs into a bowl and whisk with a fork until the yolks and whites are completely mixed and uniform in color, about 20 seconds.

    Pour the eggs into the same skillet (still over medium heat) and let them sit without stirring for 20 seconds, then use a silicone spatula to push the curds gently from the edges toward the center.

    Continue pushing the eggs gently every 10 seconds until they look soft and slightly creamy, with no visible raw liquid, about 3–4 minutes total.

    Remove the skillet from heat and turn off the stove.

    Lay a tortilla flat on a clean cutting board, then spread half the scrambled eggs down the center in a line from top to bottom.

    Spoon half the cooked beef on top of the eggs, then sprinkle half the shredded cheese (about 3 tablespoons) over the beef.

    Fold the left and right edges of the tortilla toward the center over the filling, overlapping slightly, then roll from the bottom edge toward you until tightly wrapped.

    Repeat steps 9–11 with the remaining tortilla, eggs, beef, and cheese to make the second burrito.

    If desired, place each burrito seam-side down in the skillet over medium heat for 1 minute per side until the tortilla is lightly browned, then transfer to a plate.
