Ingredients

  • 1 15-oz can black beans, canned
  • 4 count corn tortillas
  • ½ cup shredded cheddar cheese
  • 1 whole lime
  • ½ tsp cumin
  • 1 whole jalapeño
  • 1 pinch salt and pepper to taste

Instructions

  1. 1

Drain and rinse the black beans in a colander under cold water.

  2. 2

Heat a medium skillet over medium-high heat. Add the beans and cumin, stir well.

  3. 3

Simmer for 3–4 minutes, stirring occasionally, until beans are warm and slightly thickened.

  4. 4

Season beans with salt and pepper to taste.

  5. 5

Warm tortillas in a dry skillet over medium heat, 30 seconds per side, until soft and pliable.

  6. 6

Slice the jalapeño into thin rings, removing seeds if you prefer less heat.

  7. 7

Fill each tortilla with beans, then top with cheese, jalapeño slices, and a squeeze of lime juice.

  8. 8

Serve immediately while tortillas are warm.
