Ingredients

  • 2 cups rotisserie chicken or cooked chicken, shredded
  • 2 rolls crusty baguette or Vietnamese banh mi roll, halved lengthwise
  • 3 tbsp mayonnaise
  • 1 tbsp Sriracha or chili paste
  • ¾ cup pickled carrots and daikon (from jar) or fresh cucumber, thinly sliced
  • ⅓ cup fresh cilantro and mint leaves
  • 1 whole lime wedge

Instructions

    Mix mayo and Sriracha in a small bowl until smooth and bright orange.

    Spread chili mayo evenly on the cut sides of the baguette halves.

    Layer shredded chicken on the bottom half, then pile pickled vegetables on top.

    Scatter cilantro and mint leaves over the vegetables.

    Close the sandwich and press gently. Squeeze lime juice over the top.

    Slice in half if desired and serve immediately.
