Ingredients
- 1 lb shredded cooked beef (rotisserie or leftover)
- 2 cups beef consomé or broth
- 2 tsp chili powder
- 1 tsp cumin
- 2 cups shredded Oaxaca or mozzarella cheese
- 4 count flour or corn tortillas (6-inch)
- 2 count lime wedges (for serving)

Heat consomé in a shallow bowl or dish. Stir in chili powder and cumin until fragrant, about 60 seconds.

Heat a 12-inch skillet over medium-high until a drop of water sizzles on contact.

Lay one tortilla in the skillet. Sprinkle 1/2 cup cheese on half the tortilla. Quickly dip shredded beef in warm consomé, then pile onto the cheese. Fold tortilla in half.

Pan-fry the quesabirria 2 minutes per side until the tortilla is golden and crispy, cheese is fully melted.
