20-Min Quesabirria with Crispy Cheese

Ingredients

  • 1 lb shredded cooked beef (rotisserie or leftover)
  • 2 cups beef consomé or broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups shredded Oaxaca or mozzarella cheese
  • 4 count flour or corn tortillas (6-inch)
  • 2 count lime wedges (for serving)

Instructions

    Heat consomé in a shallow bowl or dish. Stir in chili powder and cumin until fragrant, about 60 seconds.

    Heat a 12-inch skillet over medium-high until a drop of water sizzles on contact.

    Lay one tortilla in the skillet. Sprinkle 1/2 cup cheese on half the tortilla. Quickly dip shredded beef in warm consomé, then pile onto the cheese. Fold tortilla in half.

    Pan-fry the quesabirria 2 minutes per side until the tortilla is golden and crispy, cheese is fully melted.

    Transfer to a plate. Repeat with remaining tortillas and beef. Pour any leftover consomé into small dipping cups.

    Serve immediately with lime wedges. Dip each bite into warm consomé.
