Ingredients
- 4 cups corn tortilla chips
- 2 cups shredded cooked beef
- 1.5 cups shredded cheese (like Monterey Jack or cheddar)
- 4 large eggs
- 1 can (16 oz) refried beans
- ½ cup salsa verde
- ½ cup salsa roja
- ¼ cup green onions, sliced

Preheat oven to 400°F. Spread the 4 cups tortilla chips on a large baking sheet in an even layer.

Sprinkle the 2 cups shredded beef and 1.5 cups shredded cheese evenly over the chips. Bake until cheese is melted and bubbly, about 8-10 minutes.

While that bakes, heat the 1 can refried beans in a small saucepan over medium, stirring often, until hot, about 5 minutes.

Fry the 4 eggs in a large nonstick skillet over medium-high with a little oil until whites are set and edges are crispy, about 3-4 minutes.

Remove the chip mixture from oven and top with the fried eggs, 0.5 cup salsa verde, 0.5 cup salsa roja, and 0.25 cup green onions. Serve with the warm beans on the side.
