Ingredients
- 8 oz store-bought sponge cake or ladyfingers
- ½ cup orange juice
- 2 tbsp rum or cognac (optional)
- 2 tbsp sugar
- ¼ cup apricot jam
- ½ cup sprinkles or nonpareils (for coating)
- 2 oz dark chocolate, finely chopped

Warm orange juice, rum, and sugar in a shallow bowl until sugar dissolves, ~2 minutes. Stir in apricot jam until smooth.

Cut sponge cake into 1.5-inch cubes. Dip each cube into the punch syrup for 2 seconds per side until lightly soaked.

Roll each syrup-soaked cake cube in sprinkles until the surface is fully coated, then place on a plate.

Melt chocolate in a small bowl over simmering water or in short 20-second microwave bursts, stirring between each.

Drizzle melted chocolate over the top of each cake cube. Serve immediately or chill until chocolate sets.
