Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1.5 cups milk
  • ½ cup brown sugar, divided
  • 2 tsp pumpkin pie spice
  • 1.5 tsp baking powder
  • 3 tbsp butter, melted
  • ¼ tsp salt

Instructions

    Heat oven to 350°F. Lightly butter an 8×8-inch baking dish.

    Whisk oats, pumpkin puree, milk, 0.25 cup brown sugar, pumpkin pie spice, baking powder, and salt in a large bowl until smooth.

    Pour into the baking dish. Drizzle melted butter over the top and sprinkle remaining brown sugar evenly across the surface.

    Bake uncovered for 25–30 minutes until the edges are set and the center jiggles slightly.
