Ingredients

  • 1.5 lbs pork shoulder, shredded (rotisserie or cooked)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 whole lime
  • 8 count corn or flour tortillas
  • ½ whole white onion, thinly sliced

Instructions

    Heat 2 tbsp oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Add pork, cumin, and chili powder. Stir constantly until fragrant and pork edges char slightly, 4 minutes.

    Squeeze lime juice over the pork and stir to combine. Taste and add salt and pepper as needed.

    Warm tortillas in a dry skillet or over a gas flame until pliable, 30 seconds per side.
