Ingredients
- ¾ cup granulated sugar
- 1.5 cup whole milk
- 4 whole large eggs
- 1 tsp vanilla extract
- ½ cup prunes, pitted and halved

Heat 1/2 cup sugar in a 10-inch skillet over medium heat, stirring constantly, until it melts and turns deep amber, about 4 minutes.

Pour the caramel into a shallow serving dish, tilting to coat the bottom and sides evenly. Set aside.

Whisk together the remaining 1/4 cup sugar, eggs, milk, and vanilla in a bowl until smooth and well combined.

Pour the custard mixture over the caramel in the dish. Place the dish in a larger pan filled with 1 inch of hot water (water bath).

Bake at 350°F for 8–10 minutes until the custard is just set but still jiggles slightly in the center.

Cool to room temperature, then refrigerate at least 2 hours until chilled. Run a knife around the edges and invert onto a plate.
