Ingredients

  • 1 cup granulated sugar
  • 1.5 cup whole milk
  • ½ cup heavy cream
  • 5 whole large eggs
  • 1 tsp vanilla extract
  • ¼ tsp salt

    Preheat oven to 350°F. Heat 3/4 cup sugar in a small skillet over medium without stirring until amber at the edges, ~4 minutes.

    Pour caramel into a round ceramic dish, tilting quickly to coat the bottom. Set aside.

    Warm milk and cream together in a small pot until steaming, ~2 minutes. Remove from heat.

    Whisk eggs with remaining sugar until pale, ~90 seconds. Slowly pour in warm milk while whisking constantly.

    Stir in vanilla and salt. Pour custard through a fine sieve into the caramel-lined dish.

    Place dish in a larger baking pan. Add hot water to the outer pan until it reaches halfway up the sides. Bake 20 minutes until custard is set but center still jiggles slightly.
