Ingredients

  • 1 loaf baguette
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes
  • 4 oz prosciutto
  • ¼ cup fresh basil
  • ¼ tsp salt

Instructions

    Slice the baguette into 1/2 inch thick slices and brush both sides with the 2 tbsp olive oil. Toast in a skillet over medium heat until golden and crisp, about 2 minutes per side.

    Halve the 1 cup cherry tomatoes and toss with the 1/4 tsp salt in a small bowl. Let sit while the bread toasts.

    Top each toasted slice with a slice of the 4 oz prosciutto, folding it to fit.

    Spoon the tomatoes over the prosciutto and tear the 1/4 cup basil leaves on top. Serve immediately.

    For extra flavor, add a drizzle of balsamic glaze or a crack of black pepper if you have them.
