Ingredients

  • 1.5 lb chicken thighs and drumsticks
  • 6 cloves garlic cloves, minced
  • ¾ cup all-purpose flour
  • ¼ cup cornstarch
  • 1 lb frozen french fries
  • 2 cup neutral cooking oil, for frying
  • 1 pinch salt and black pepper to taste
  • ½ cup ketchup, for serving

Instructions

    Pat chicken dry with paper towels. Season generously with salt and black pepper on all sides.

    Mix flour, cornstarch, 1 tsp salt, and 0.5 tsp black pepper in a shallow bowl. Coat chicken thoroughly.

    Heat oil in a large, heavy skillet over medium-high until it shimmers — about 2 minutes. Oil is ready when a piece of flour sizzles.

    Carefully add chicken to hot oil. Fry 5–6 minutes per side without moving until deep golden brown and cooked through.

    Meanwhile, bake frozen fries in a separate oven (or air fryer) at 425°F for 18–20 minutes until crispy.
